To most of us, a roasting pan is a moderately high sided rectangular pan with a rack to hold the roast or bird. Well, it is time to think and cook anew. This pan with lower and wider sides will allow the oven's heat to reach more of your food. Forget a rack and place your food on chopped aromatic vegetables (chunks of carrot onion celery parsnip etc) which will roast along with the meat, giving great flavor and some moisture to the drippings. You will find your roasting technique transformed and the end results truly wonderful.
Not roasting? Ideal for a party paella or jambalaya, or ribs. Try game birds (yes you can roast 4 to 6 game hens at once) and it will take your turkey with ease!
